This is my first experience using a silicone muffin pan. I was very happy with the results (even with my mistake)! To go with the ham soup I had made for dinner I decided to make cornbread muffins. The package of mix I use is only for 6 muffins so I doubled the batch. As I was calculating the ingredients I doubled the amount of milk I needed in my head, and then doubled it again when I was measuring! Oops! So instead of a 1/2 cup I added a whole cup. If you notice the muffins didn't rise as much as you might expect, they were a little denser. Although, I thought they tasted ok and the boys didn't seem to mind, as you can see three were missing when I got to take a picture! I love how cleanly they came out of the muffin pan. You can see that there isn't any muffin stuck to the pan. Just as they say the clean up was easy too! Next I'm going to try making some Breakfast Egg Muffins.
